Dairy Free, refined sugar free!
This ice cream is ridiculous.
It's so creamy, you wouldn't know it was dairy free. If you're not into coconuts, don't fret: the coconut flavor is totally hidden by all the chocolate. This is the perfect ice cream to fool a dairy-lover; plus, it is SO easy to go plastic free here! Coconut milk comes in cans; sugar, chocolate chips, and cacao powder can be purchased in bulk; eggs come in a carton (please don't buy the styrofoam or plastic ones). Ingredients:
- 2 cans full fat coconut milk
- 3 tbsp cacao powder
- 1 cup chocolate chips
- 3 egg yolks
- 6 tbsp maple syrup + 10 drops stevia (to taste)
- 1 tsp vanilla extract
Method:
- Heat 1 can of coconut milk with 3 tbsp cacao on stove and then pour over chocolate chips to melt and set aside.
- Heat other can of coconut milk with maple syrup and stevia to simmer.
- In a bowl, whisk egg yolks. Add 1/2 cup of warm coconut milk mixture into eggs and whisk.
- Then pour egg - coconut milk mixture back into pot on the stove and stir consistently until mixture coats the back of a spoon or reaches 170F.
- Add the coconut milk - cacao - chocolate chip mixture to the pot with the rest.
- Pour mixture through strainer to get any cooked egg particles out.
- Chill in a mason jar overnight.
- Add to your ice cream maker and store in an airtight container in the freezer.
- Yum!
