Perfect Tahini Blondies

Free of dairy, gluten, grains, and refined sugar


These are like halva and cake had a baby... they're SO GOOD!

 

Normally, I love making my own tahini - it's cheap and very easy with a food processor. All you do is toast the seeds in the oven on 350F for about 10-15 minutes until you start to smell them and they become slightly golden. Pop them into the processor and process while they're still warm with a little bit of salt. SO GOOD and major waste reduction... Hi my name is Jessica and I have a jar hoarding problem. When I can't make it myself, I buy Artisana Organics because they are glass jars and do not have the little plastic cuff around the lid. Also, if you buy from their website, they don't use any plastic in their packaging. 

I must admit, my goal to consume less sugar leaves me purchasing monk fruit sweetener, which I am not able to find in bulk. I try to find the biggest bags possible; I'll often mix it with the bulk coconut sugar to lessen my impact. Just doing my best! If someone wants to send me a 10lb bag of monk fruit, let me know.

Now, about these blondies. I've written about my tahini obsession - my love for it straight or mixed with a little honey. So, I used honey in addition to monk fruit to sweeten these because I find that honey just pairs SO well with tahini. You can swap the honey for maple and the monk fruit for the granulated sugar of your choice. 

Recipe: 
  • 1 cup tahini (I recommend Artisana)
  • 1/3 cup monk fruit (or any granulated sugar)
  • 3 tbsp honey (or maple syrup)
  • 1 tsp vanilla (I use paste, extract will work)
  • 1 tbsp avocado oil
  • 2 eggs
  • 1 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Method: 
  1. Preheat oven to 350F and prepare an 8x8 baking pan with parchment paper
  2. Mix tahini, sweeteners, vanilla, oil, and eggs.
  3. Add coconut flour, baking soda, and salt.
  4. Spread into baking pan (it is a thick gooey batter) and bake for 20-25 minutes.

  1. I made these and they are so good !!! The texture is perfect. They puff up quite a bit while baking but then settle back down to the perfect consistency.
