Healthy White Chocolate Macadamia Nut Pizookie

Gluten and refined sugar free, with dairy free options

You know you want this with a dollop of ice cream. 

True story, in high school my girlfriends and I would go to BJ's Brewery and giggle at the "hot" waiters. I used to be able to finish an entire pizookie to myself, ice cream and all. How is that even possible? I didn't even feel sick afterwards... those were the days.


Another true story, there was one particularly cute waiter with whom we "flirted" through dinner (honestly, thank god there is no social media at the time of this); when it came time for dessert, we decided to get 2 pizookies for the 4 of us. I looked at the waiter to order one for myself and a friend. I started to say we'd like to share a pizookie but halfway through it turned into split a pizookie... so I said "we'd like to shit a pizookie." It was a full on "gruel" (Mean Girls, hi) moment. I was mortified. The pizookie made me feel better, though. This cookie will make you feel better, also. 

You can't beat some vanilla ice cream on top of a warm skillet cookie!

I wanted to make this cookie tasty, healthier, and easily done with low plastic waste. I use my favorite cashew butter from Artisana Organics, which comes in a glass jar without the plastic cuff around the top. I used ghee, maple syrup, and vanilla extract from glass containers. I buy maple syrup by the half gallon from Covered Bridge Maple on Etsy. The eggs I buy are always in paper cartons, never plastic or styrofoam. I blend oats purchased in bulk from nuts.com into oat flour; it is cheap and easy to make your own oat flour! Both white chocolate chips and macadamia nuts can be found in bulk from nuts.com. It's easy to be satisfied, healthy, and environmentally conscious!! Yay!

I used this 8-inch Lodge cast iron skillet to make this recipe. I like Lodge because they're made in USA, really nicely priced, and they come pre-seasoned. I've never had sticking issues, just make sure you oil it up before cooking and baking with it! Please please please never use teflon! Get rid of it if you have any, it's coated in plastic. 

Ingredients: 
  • 1/2 cup cashew butter 
  • 1/4 cup ghee (alternative fats and oils will work, but I love the flavor ghee lends)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 egg 
  • 1 cup oat flour 
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt (omit if using salted nuts)
  • 1/3 cup white chocolate chips 
  • 1/3 cup chopped macadamia nuts 
Method:
  1. Preheat oven to 325F.
  2. Mix together cashew butter, ghee, maple syrup, and vanilla. 
  3. Add egg and mix. 
  4. Pour oat flour and baking soda into bowl and mix together. 
  5. Add white chocolate and mac nuts and mix together. 
  6. Bake for 20 minutes. 
  7. If you want a browner top, broil for 1-2 minutes but keep an eye on it !
  8. Top with ice cream !
